Buckwheat Flour

Buckwheat Flour is ideal for making 100% buckwheat bread.

This flour is also very useful when combined with white or whole wheat spelt flour, especially in scalded dough (with 200% hydration), as it helps reduce the gluten content in the final product.
It is recommended to use between 5% and 40% of buckwheat flour in the formula, especially for spelt/buckwheat breads.
