Rustic Rye Flour

Our Rustic Rye Flour is characterized by its high fiber content. This flour is designed for making “Auvergnat” rye bread or German-style bread, for example. Rustic Rye Flour enhances extensibility, hydration capacity, and dough preservation. It can also be used to prepare poolish or natural sourdough with a rich flavor and a high level of fermentation. Since it is a rustic flour, the amount of water used should be higher than when using white rye flour.
